4-5 red skinned potatoes

4 hard boiled eggs

2-3 spoonfuls of Mayo/Miracle Whip

1-2 tablespoons of honey mustard

salt and pepper to taste

Optional Ingredients:

1-2 celery stalks

2 teaspoons of garlic powder (or more if you prefer)

1-2 teaspoon of paprika

other fancy mustards

  1. Boil eggs and potatoes, I would recommend potatoes started first because it takes longer to boil them properly. Twenty minutes for potatoes at least and closer to 10 for hard boiled eggs. Look here for a really good explanation of how to make the perfect hard boiled egg.

  2. Peel eggs, put both eggs and potatoes into a bowl and using a metal mixing spoon, start to cut the potatoes in halves and quarters along with breaking up the eggs into large chunks.

  3. Add in the mayo or miracle whip until you get a consistency that you are happy with. I tend to throw in two to three large spoonfuls but I love the taste of mayo a little too much for my own good.

  4. Add in the honey mustard, salt, pepper and any other optional ingredients you’d like.

  5. Serve as is or if you have other things to make, put it in the fridge while you finish dinner. I think it tastes better when cold.

I love potato salad, especially this time of year when everyone is hard boiling eggs and it just makes sense as a way to serve them. Also, I’m finding it hard sometimes to take pictures while I am cooking a recipe I know I want to feature so forgive me if I don’t have pictures of every single step! I am trying my best here, and I thought I’d get this out before Easter. Look forward to another egg-celent recipe coming soon.
