Cranberry Bread

Cranberry Bread

(This recipe originally comes from the lovely people at Genius Kitchen.)

Ingredients:

1 cup of sugar

2 cups of flour

1/2 cup of orange juice

2 tablespoons of water

1 cup of fresh cranberries

1/2 teaspoon of baking soda

1/2 teaspoon of baking powder

1/2 teaspoon of salt

Instructions:

  1. Wash cranberries removing any bad ones (See cranberry sauce recipe for instructions on how to do that)

  2. Chop cranberries in half (note how they are actually white on the inside!)

  3. Sift sugar, flour, baking powder, baking soda, and salt together in a large mixing bowl.

  4. Add in the orange juice, water, and cranberries in and stir them into the dough completely.

  5. Bake at 350 for an hour, use knife test to be sure it’s done!

One thing to note with this recipe, which is among my other holiday themed foods I bring to parties, is that it is a very dry dough which will make it hard to mix. Unless you have really strong arms, I’d recommend a hand mixer or something so you can get all that flour properly mixed together. Also as cranberries do have a ton of seeds inside, if you want to you can always remove the seeds as you cut but that is a lot of extra work. Often though, they will fly everywhere anyways so you won’t have a super seedy bread. Note, standard cranberry packs will mean that you will probably have leftovers, in which case I recommend making a tiny batch of cranberry sauce while you’re at it!
